Sambar is the heartiest stew of South India, filled with lentils and vegetables. Your spice kit has the traditional recipe, but we will discuss some easier, equally hearty variations that use perfect Fall vegetables - pumpkins, butternut squash.
This stew can be eaten with a baguette, toasted sourdough, by itself or with rice.
Ingredients (also listed in your Spice Kit mini cookbook):
1/2 cup of masoor dal OR 1 cup of lima beans/butter beans
1tbsp ghee or butter
(optional) mustard seeds
3 large cloves garlic
3 cups of vegetables of your choice: pumpkin, butternut squash, chayote, green beans, carrots, cauliflower, peas, zucchini
1 large tomato
1 large onion
1 tbsp brown sugar or jaggery
